Ingredients

  • 1 (8″) Flour Tortilla

  • 3 Large Eggs

  • 1/4 C. spinach leaves, chopped

  • 1/4 C. shredded cheese

  • 1/4 C. sausage, chopped

  • 1 Tbsp. Mayo or Miracle Whip

  • Salt & Pepper to taste

Directions

  • Cook the Sausage, In a skillet over medium heat, cook the chopped sausage until browned. Remove from pan and set aside.
  • Scramble the eggs, in the same skillet, crack the eggs and scramble them until fully cooked.
  • Add Spinach and Cheese, Once eggs are nearly cooked, stir in spinach and shredded cheese. Cook for another minute until the cheese is melted and spinach is softened.
  • Spread miracle whip or mayo on one side of the flour tortilla.
  • Assemble the wrap, place scrambled egg mixture and cooked sausage of the flour tortilla. Fold in the sides of the tortilla, then roll it up tightly from the bottom.
  • Optional but one of my favorites. Toast the wrap for one to two minutes on each side for crispiness.

Notes & Tips for the Perfect Breakfast Wrap

Use a Warm Tortilla – Warming the tortilla for a few seconds in the microwave or on a skillet makes it more flexible and easier to roll without tearing.

Prevent a Soggy Wrap – If meal-prepping, let the scrambled eggs and sausage cool slightly before assembling to avoid excess moisture soaking into the tortilla.

Evenly Distribute Ingredients – Spread the fillings in the center of the tortilla, leaving space around the edges for easy rolling.

Make It Ahead – Prep multiple wraps, wrap them in foil, and store them in the fridge for up to 3 days. Reheat in the microwave for 30-45 seconds.

Freeze for Later – Wrap the assembled (but un-toasted) wrap tightly in plastic wrap and store it in a freezer bag. When ready to eat, thaw in the fridge overnight and reheat in a skillet or microwave.
